Dill oil has been used from the ancient times for various purposes. It was believed by the Romans that applying dill seed oil topically onto the skin would reduce levels of stress and nervousness. The oil was believed to provide strength by reducing the sense of nervousness and stress. Further, it was believed to protect against black magic, and that it was used as an ingredient in the making of love potion. Dill oil is a versatile essential oil, with properties ranging from antifungal, antibacterial, to antioxidant, etc.

The plant is available in two different variants: Indian Dill (known by scientific name Anethum Sowa), and European Dill (known by scientific name Anethum Graveolens). As the name suggests, Indian Dill is cultivated in various parts of India during the winter season. Whereas, European Dill is cultivated many European countries like England, Germany, etc., but it is also cultivated in other parts of the world like USA, and Russia. The properties of the dill oil extracted from different dill plants may vary a little. Further, there are also two types of dill oil available in the market, one of which is called dill seed oil, whereas, the other one is called dill weed oil.

The steam distillation process is used for the extraction of the dill seed oil from the mature seeds of the dill plant. On the other hand, the same steam distillation process is used for the extraction of dill weed oil, but in this case, fresh dill plant herbs are used. The color and aroma of the two dill oils also vary. The color of the dill seed oil could vary from light yellow to light brown, and it gives a light caraway kind of odor because of the high level of carvone contents present in it. But the color of the dill weed oil varies between pale yellow to liquid yellow, and it gives a strong fresh and a type of spicy odor.
